Iam a great Pickle lover, without this supporting artist I cannot finish my story (food). When one of my fb friend vidya sriram posted this Hero’s Picture, without further delay got the story from her. Then rushed to my kitchen spot and immediately got the callsheet from this Hero Cauliflower who was lying in my fridge without any chance. Hero Cauliflower was very happy as he was fed up to act on same subject Gobi65, Cauliflower Kurma etc. He was happy about the new subject pickle. Though the story was same what we used to direct for Tomato Pickle but here we need to be careful in handling this Hero, that’s the major difference. I just directed a short film instead of big movie, As I was bit worried how it would turn.

Movie Name: காலமெல்லம் Cauliflower ஊறுகாய் வாழ்க

Cuisine: Cooking time: 80 mins Serving: 2 people
Thala Thalapathi(Main Ingredients):
  •  Cauliflower – 200gms
  • Red Chilly powder- 1 ½ tsp
  • Turmeric Powder- 1/4 tsp
  • Lemon – ½ (juice)
  • Curry leaves- 1 sprig
  • Garlic cloves- 7
  • Mustard seeds- 1 tsp
  • Salt- as needed
  • Oil- 3 tbsp
To roast and Grind:
  •  Fenugreek seeds- 2Tsp
  • Mustard seeds-1 tsp
  •  Cut the cauliflower into small florets, Soak it in salted luke warm water for ten minutes. Then wash it under the running water.

  • Wipe it with a kitchen towel, spread it and sun dry it for nearly 2 to 3 hours. Dry roast the items given under “ To roast and grind” and keep aside.

  • Once its completely cooled powder it in a mixer jar. Now heat oil in a pan.

  • Add the sundried cauliflower and fry it until it slightly changes it color and keep aside.

  • To the same pan, add Mustard seeds, once  it splutters add curry leaves followed by garlic cloves. Once the garlic turns slight brown, add the fried cauliflower and mix it well.

  • Now add the redchilly powder, turmeric powder and salt. Mix it well. Add the lemon juice and give a quick stir. Add 1 tbsp of fenugreek and mustard powder . Mix it well. Once its completely cooled, store it in a clean jar.

  Lipsmacking Cauliflower garlic pickle is ready!!! We completely finished it off in two days , even my guest loved this pickle very much.. Thank you Vidya baby for such an awesome recipe..   Planning for another batch.....                                

  •  For better shell life, either sundry or leave it under the fan, or slightly heat the oven and put it inside..This is to make sure there is no moisture content in it.
  •  Since, am trying for the first time, used only 200 gms, u can go ahead and use the whole cauliflower too but increase the spice level.
  •  Frying of cauliflower in the oil is to ensure there is no moisture content in it.
  •  Adding of garlic is optional.
